We'll be cooking lots of fish in the next year or so -- next week Bob is going halibut/salmon fishing in Alaska and last time he went he brought back over 200 lbs of fish -- so if I run into the problem you had and find a better solution I'll let you know. (We love fish, so our only option to us not cooking it is paying someone else to!) Our usual St. Paddy's Day dinner was a bit truncated due to my inability to use both hands . . . but I still managed baked corned beef and carrots with Jameson/orange marmalade glaze, champ and currant soda bread, and even managed to make dough for scones for breakfast today, recipes from cookbook I got in Ireland. I ran out of steam before dessert, so your cupcakes look extra delish!! I'm not a huge fan of Guiness or stout, except in Guiness beef stew, but I did like a wee dram o' the Jameson on the rare occasion . . . oh, and I love Bulmers Irish apple cider!
